This is a delicious side dish made out of potatoes and a variety of spices that gives it a real yummy taste. It’s a popular traditional Bengali breakfast recipe which is prepared on special occasions like festivals and birthdays. It goes well with luchi, paratha or roti.

Ingredients:
2 lbs of Baby Potatoes
1 Onion Paste
1 Tomato Paste
Paste of 5 Green Chillies
2 “ long Ginger Paste
25 gms Grounded cashew Nuts
Few fresh Coriander leaves
1 tsp Kashmiri Red Chilly Powder
1 tsp Garam Masala Powder
Half a tsp Hing
1 tsp Turmeric Powder
1 Bayleaf
1 tsp Cumin Seeds
1 tsp Ghee
Mustard Oil
Salt and Sugar to taste
Cooking Procedure:
First make few holes into the boiled potatoes and then heat mustard oil and fry the potatoes. Then add salt and turmeric powder and fry it until it is light brown. Remove it when done.
Now add bay leaf, cumin seeds and hing to temper in oil. Add onion paste and fry it for couple of mins until it is light brown.
Add ginger paste and fry it for 2 mins and then add tomato puree and cook it for 2 more mins. Then add kashmiri red chilly powder and turmeric powder and mix it well. Add half a glass of water to avoid from burning and cook it for 2-3 mins.
Add a glass of water and then add cashew nuts and green chillies paste. Stir it then add salt and sugar as per taste.
While boiling add the fried potatoes. Mix it well and cook it for 3-4 mins.
It’s now done so lastly add garam masala powder, ghee and garnish with coriander leaves.
Serving Suggestion:
Aloo dum best goes with Luchi. Enjoy it with Roti or Partha as well. It took me about 45 mins to prepare this Aloo dam and serves 3 to 4 people.
