CHICKEN BIRIYANI – Kolkata Style Biriyani Prepared in Microwave  

Kolkata style Chicken Biriyani. Biriyani is made out from a mixture of spices, rice, commonly basmati rice, meat or vegetables, and yogurt which makes it a distinct special aromatic dish. It is specially prepared for special occasions such as wedding, parties and festivals. Making biriyani is a time consuming process but ultimately  its worth our effort.

Serving Size: 2-3 people

Cooking Time: 1.5 hour


  • 5 Chicken drumstick
  • 2 Cups Basmati Rice soaked into water
  • 1 Onion cut into lengthwise
  • 1 Onion Paste
  • 1 Tomato Paste
  • 4 cloves of Garlic Paste
  • Paste of 5 Green Chillies
  • Few fresh Mint Leaves
  • 2 Potato Halves
  • 2 Hard Boiled Eggs
  • Half a Cup of Yogurt
  • Few Safron  and Kaora water soaked into Milk
  • 1 tbsp Ghee
  • 1 Bayleaf
  • Whole Garam Masala ( Cinnamon Stick, Cardamom, Cloves)
  • 2 Mace
  • Few Pepper Corn
  • 1 Nutmeg
  • 1 tsp Red Chilly Powder
  • 1 tsp Turmeric Powder
  • 1 tsp Cumin Powder
  • White Oil
  • Salt and Sugar to taste

Cooking Procedure:

  1. First marinate the chicken with little bit of salt, green chilly, cumin powder, red chilly powder, ginger paste, garlic paste, onion paste, tomato paste, and yogurt. Mix everything well.
  2. Then in a coffee grinder make a powder of nutmeg, cinnamon stick, cardamom, cloves, mace, and pepper corn.  Then add the powder and chopped mint leaves in the marinade and mix it well. Keep this in the refrigerator for about half an hr.
  3. In another bowl soak rice in water for half an hour. Then in the spice infuser add all the spices. Add water in a pan and add the spice infuser and bring this to a boil. Now add rice and salt in the water. Then drain the water from the rice.
  4. Now add white oil in a frying pan. When oil is hot, add the onion and fry it until it is light brown. Remove it when onion is brown and crispy.
  5. Now lightly fry the potatoes and then remove it.
  6. Cook the chicken on a medium heat for about 15-20 mins. After 10 mins add the potatoes and fry it until it turns brown.
  7. In a micro-wave safe container, first add a layer of rice then add the chicken and potato. Then again another layer of rice and turmeric powder to make the yellow color instead of food color. Then sprinkle some crispy onion and again another of chicken and potato and finally another layer of rice, some turmeric and some crispy onion and lastly add kesar and kaora water and then ghee. Sprinkle little of water and cover the lid.
  8. Microwave it in a full powder for about 7 mins. Remove it and enjoy.

Serving Suggestion:

Enjoy Biriyani with mixed vegetable Raita. It took me about one and half hour to prepare this Biriyani and it serves 2-3 people.
