It’s a traditional way to cook chicken with yogurt and spices. Chicken Rezala is served with rice, pulao or biryani.

500 gm Chicken cut into 2” pieces
1 Raw Onion cut into rings
1 Cup of Yogurt
4-5 Cloves of Garlic
2” long Ginger grated
3-4 Green chillies
few Raisin soaked into water
Dried Red Chilly
25 gms Cashew nuts
5- 6 Cloves
Few Pepper corn
Ghee or Clarified butter
Salt and Sugar to taste
First marinate the chicken with grated ginger and make a the paste of onion and green chillies and then add 3-4 tbsp yogurt. Nicely mix everything add a tbsp of salt. Now keep it in the refrigerator for about an hr.
In a bowl add the rest of the yogurt add a cup of water half a tbsp of salt and 1 tbsp of sugar. Bit the yogurt well and make it smooth and lump free.
Add 2 tbsp of mustard oil and ghee in a skillet.Then add the dried red chilly, black pepper corn, star anise, cinnamon stick, cloves and cardamom. Then temper this spices for couple of mins .
Now add the marinated chicken into it and saute it for 5-7 mins .
Add the raw onion rings give it a nice mix and cover the lid and cook it for 7-10 mins on medium heat then add the beaten yogurt and mix it well.
Add the cashew nuts paste and soaked raisins and then cover the lid and cook it for 12-15 mins. Take it out of flame when done.
Enjoy Chicken Rezala with rice or paratha. It took me an hour to prepare this dish and serves 3-4 people.
