Spinach Curry, Palak Vadi, Palang Bori Tarkari  

The recipe is very good, easy and cheap. I understood the meaning of cooking only after moving to US. I had a lot of free time. This dish is good for vegetarian feast.

Serving Size: 4

Cooking Time: 40 mins

  1. 200 gm Spinach ( Palak )
  2. 1 Aloo ( Potato )
  3. 1 Egg Plant
  4. 4-6 Vadi
  5. 1 tsp Cumin Seeds
  6. 1 tsp Cumin Powder
  7. 1 tsp Coriander Powder
  8. 1/2 tsp Turmeric Powder
  9. Salt to taste
  10. Sugar to taste
  11. Mustard Oil
  12. Water As Required
Cooking procedure:

Cut the Spinach and pat it dry .
Cut the Egg Plant and Alu into small pieces.

Fry the Egg Plant , Aloo and vadi separately and keep aside .

Put Cumin seeds to crackle in oil and then add palak. Stir it. When it is tender add aloo , eggplant and vadi then add cumin powder and coriander powder with salt and turmeric ( salt,sugar and turmeric should be added according to one’s taste and colour) in the oil. After the oil comes out put cup of water into it for boiling. Stir it.

Serving Suggestions:
Serve it with Rice or Roti.

    when i shud put da spinach?
    Plz specify as i’m ameture in cooking.

      When the cumin seeds crackle in oil then add the spinach and cover the lid. After 2 mins add potato to make it tender.
