Echor or Green Jack fruit is a popular vegetable in Bengal. This is a dry and tasty recipe which goes well with rice. Make sure you get the canned jack fruit in water and not in brine. Jack fruit which comes in the brine has a sour taste which is not suitable for Bengali recipes. You can get jack fruit in can in any Chinese grocery store.

Ingredients:
Echor or Green Jack fruit
1 Onion chopped
1 Tomato chopped
1 Potato cut into small pieces
6 Raw Shrimp
1” long Ginger
2 cloves of Garlic
3 Green chillies
1 tsp Cumin Powder
1 tsp Coriander Powder
1 tsp Garam Masala Powder
1 tsp Turmeric Powder
1 Bay Leaf
1 Dried Red Chilly
2 tsp of Ghee or Clarified Butter
Mustard Oil
Salt& Sugar to taste
Cooking Procedure:
Cut the jack fruit into small pieces. Then make a paste of Ginger Garlic.
Heat mustard oil. Light fry the shrimp.
Now fry the potatoes and Green Jackfruit. Add a little bit of salt and turmeric powder. Keep it aside when done.
Add little more mustard oil. Then add Bay leaf and dried Chilly as a phoron.
Add chopped onion and fry it until it is light brown.
Add ginger garlic paste and fry it for 3-4 mins.
Add chopped tomatoes and green chillies. Add water and smashed it completely. Cumin powder, Coriander powder and Turmeric powder and mix it well.
Add water and then salt and sugar. Add potatoes and green jack fruit and mix with the spices. Cook it for about 5 mins. Add a glass of water and mix it well. Cover the lid for about 5-6 mins.
Add the fried shrimp and cook it for 2 mins. Lastly add garam masala powder and ghee and mix it well. Take it out of the flame.
Serving Suggestions:
Server Echorer Dalna with white rice. It took about 45 mins to prepare this recipe and serves 3-4 people.
