Snake gourd is one of those vegetables which are rarely used for cooking. Snake Gourd can grow up to 6 feet in length. This is a traditional way to make the snake gourd dish in Bengali style. This is a kind of dry preparation.

1 large Snake Gourd (Chichinga )
1 Onion chopped into small pieces
1/2 cup shredded Coconut
1 tsp kalo Jeera or black cumin
2 Dried Red Chilly
1 tsp Turmeric Powder
Sugar to taste
Rub the snake gourd with the knife taking off the white skin. Cut it in half lengthwise. Remove the seeds you can use the spoon to remove the seeds easily. Again cut in halves and chop into small pieces.
In non stick pan heat white oil add dried Red Chilly and kalo jeera to crackle in oil.
Add chopped onion and fry it for 2 mins until it browns.
Add the chopped snake gourd and fry it for 5 mins in medium heat. When the snake gourd becomes tender add salt and turmeric. Stir it about 2 mins. Cover the lid and cook it for 5 mins in low heat.
Now add the shredded coconut and toss it so that the coconut get mixed with the vegetable.
Lastly add pinch of sugar to enhance the taste.
Take it out of flame when Snake gourd is done.
Chichinga fry is now ready. Serve it with white rice and dal. It took about 30 mins to prepare this recipe and serves 2 people.
