Aar fish is a type of fresh water catfish. It has less bones so anyone can eat the fish including small children. Aar fish sorshe jhol is a very simple and tasty fish recipe to prepare. It is served with plain rice.

Ingredients:
500 gms of Aar Fish
1 tbsp Black Mustard Seeds
1 tbsp Yellow Mustard Seeds
1 Eggplant cut into small pieces
7-8 Green Chillies
Few Dal Varis
1 tsp Black Cumin or Kalo Jeera
2 tsp Turmeric Powder
Mustard Oil
Salt and Sugar to taste
Cooking Procedure:
First make a paste of mustard seeds and green chillies.
Sprinkle a little bit of salt and turmeric powder on the fish. Heat mustard oil and fry the Aar fish.
Now in excess oil fry the Dal Bori. Remove it when it is light brown.
Fry the eggplant and keep it aside.
Reduce the heat and then add kalojeera/black cumin and green chillies.
Add mustard paste. Then add turmeric powder, salt and sugar into the mixture. Add a glass of water and mix well.
Add Dal Vadi when it starts boiling and cook it for a few mins before adding the eggplant and fish.
Add eggplant and cover the lid.
After about 5 mins fish will be cooked and ready to be served.
Serving Suggestion:
Enjoy Aar Macher Sorshe Jhol with white rice. It took about 45 mins to prepare this recipe and serves 2-3 people.
